Led by two-time James Beard Award winner Chef Gavin Kaysen, The Merchant Room, is a New American Brasserie, featuring in-house dry aged steaks and house-made pasta paired with the Gulf coast’s bounty.

The Merchant Room’s sophisticated coastal design evokes the ease and grace of Old Naples with a visually layered dining room inspired by the destination’s lush botanicals. An expansive terrace offers al fresco dining with cascading views of the sparkling pool leading to the Gulf.

Chef Gavin Kaysen

A nationally celebrated chef, Gavin Kaysen brings decades of experience and wide acclaim as one of the most influential voices in American cuisine. He is the founder of Soigné Hospitality Group in Minneapolis, a collection of restaurants which includes Spoon and Stable, Demi, Bellecour, and Mara at Four Seasons Hotel Minneapolis. His numerous accolades include two James Beard Awards: Rising Star Chef of the Year in 2008, and Best Chef: Midwest in 2018.

Our Philosophy

The Merchant Room is grounded in the foundation of thoughtfully sourced ingredients and warm hospitality. It is a deeply personal project for Chef Kaysen—a name he once considered for his first restaurant, now finding its perfect home in Naples. Inspired by the spirit of service, The Merchant Room embodies a welcoming ethos where craft, care, and connection are at the heart of every experience.
